How to Use the Panettone and Colomba Turning Trolley | Bakeit
Large leavened products like Panettone and Colomba require critical care immediately after baking: to prevent them from collapsing under their own weight and losing their classic dome shape and airy crumb structure, they must be cooled upside down.
Traditionally, standard panettone cooling rods are used for this delicate task: the process involves taking the baked goods out of the oven, piercing the base of each piece with skewers, flipping them manually, and resting the ends of the rods on dedicated racks. While effective, this method requires considerable physical effort, dexterity, and time for every single piece.
For professional bakeries, the best alternative is a panettone turning trolley, such as our stainless steel model designed for rotary rack ovens, which allows you to flip an entire batch in a single motion. This guarantees maximum speed, perfectly uniform cooling, and zero damage to your baked goods.
Here is how to use it.
How to use the Panettone and Colomba turning trolley
At first glance, a trolley equipped with an overturning mechanism might seem complex or difficult to manage safely. In reality, it is quite the opposite: the mechanism is straightforward, ensures maximum stability, and is designed to be operated smoothly by a single person in complete autonomy.
Here is the step-by-step process:
- Loading and securing: place the panettoni (or colombe) in their paper molds onto the dedicated baking trays and secure them with the stainless steel skewers. The skewers pierce cleanly through the paper molds, locking them firmly to the tray
- Baking in the Rotary Oven: load the trays into the trolley. Once fully loaded, couple the entire trolley inside your rotary oven and start baking. Thanks to the secure fastening, the panettoni remain completely upright and stable throughout the entire bake cycle.
- Extraction and overturning: when baking is finished, pull the trolley out of the oven. Release the safety lock to overturn all trays upside down in just a few seconds. Once flipped, re-engage the safety lock manually to secure the structure upside down safely.
- Cooling: in the inverted position, the trolley holds the products completely secure. This model also guarantees that the bottoms remain suspended without contact, ensuring heat and moisture evaporate evenly without condensation building up at the base of the paper molds.
