What is the best oven for a pizzeria?

There is no “best” oven overall, but the model most suitable for the needs of your business. For example:

  • For artisanal pizzerias or venues with limited space, we recommend compact, easy-to-install solutions, such as the Citizen electric ovens for 4, 6 or 9 pizzas.
  • For large venues or chains with high turnout, the ideal choice is tunnel ovens, such as the Zanolli Synthesis, which allow you to bake hundreds of pizzas per hour continuously.
  • For traditional Neapolitan pizzerias choose an oven capable of reaching 500 °C, for fast and fragrant baking, in full respect of tradition. The ideal model is the Zanolli Avgvsto, specifically designed for Neapolitan pizza.

    How many pizzas can I bake with a professional oven?

    The number of pizzas you can bake with a professional oven varies depending on the chosen model:

    • Traditional ovens: from 30 to 60 pizzas per hour, depending on capacity (with 4, 6 or 9 pizzas per bake).
    • Tunnel ovens: up to 200 pizzas per hour thanks to the continuous baking system.

    The final result also depends on the type of dough, the diameter of the pizza (standard 30 cm) and the baking time (about 3.5 – 4 minutes). Bakeit ovens are versatile and also suitable for other products such as bread, focaccia, tortillas and snacks, each with its own specific baking times.

    Do you need a chimney to install a pizza oven?

    Electric pizza ovens do not require a chimney, as long as there is a duct for the vapors and cooking aromas. In environments without a duct, it is possible to install a condensation hood.

    Gas pizza ovens, on the other hand, always require a chimney in compliance with local regulations for the expulsion of combustion fumes.

    What temperatures can a professional pizza oven reach?

    The maximum temperature of our ovens varies depending on the type of oven. The Citizen electric oven 4, 6, or 9 pizza capacity, has a maximum cooking temperature of 400°C, while our electric oven for Neapolitan pizza can reach 500°C.

    As for the Synthesis tunnel oven, equipped with a ventilated system, its maximum achievable temperature is 320°C.
